Wendy Vallaster

Wendy is from Vancouver, B.C., Canada, and has been living in Spain since the fall of 2007, with a focus on Wine Education, Sensorial Analysis, and Global Spanish Wine Sales.

Wendy is a Certified Sommelier with the International Sommelier Guild, a Wine Judge (Iberwine competition, Club Gourmet alternative, Head Judge at Vinoble Sweet and Fortifited competition 2010), She is the course Writer and a wine Professor for the ‘New Spain Wines’ education series, the International Sommelier Allicance program, a Certified Sherry Educator, and founder of the Ocea Mae European Sommelier Institute. She has organized and taught The Spanish Wine Educators program in cities all around the world for The Wine Academy of Spain in 2008/2009.

Wendy’s philosophy, based on her 25 yrs in the hospitality industry, is to work within the wine community, connecting the industry with the consumer via the media, tasting and wine education (bringing the Wine to the People, and the People to the Wine).  During her time as Wine Director with The Terminal City Club, a large private club with a hotel, 3 restaurant venues and a Pub, she created a very large, interactive wine program for both private members, and the public venues.

During her time in Vancouver, Wendy performed a series of Guest Sommelier performances with CBC TV, some guest spots with Hollywood and Vines during their Spanish tour, as well as guest Sommeiler radio sessions with the Tasting Room in Vancouver, and many guest spots in Spain, on Pancho’s food and wine radio show! 

Global wine education is key in developing wine culture. Living in Spain has spurred her motivation to help major wine producing countries like Spain learn and understand other grape varieties and wine styles present throughout the wine world, and their positioning in all markets and wine cultures.

Wendy continues to focus her efforts on exploring the specific Wines and Terroirs of Spain, keeping herself current in the new and exciting developments taking place in the country, and then conveying this information to other wine professionals and students globally via specifically tailored wine courses, organized and presented by both Wendy and her husband / partner, Javier Arauz at ‘New Spain Wines, & the Ocea Mae European Sommelier Institute www.OMESInsitute.com’.

Aside from the above projects, and wine consulting, a new chapter has been unfolding over the past few years with ‘The New Spain Wines Export Portfolio’, featuring terroir driven Spanish wines… wines with personality that represent the fresh vibe and excitement we all feel coming out of Spain's continuously evolving and developing wine scene. This Spanish wine portfolio is available to importers throughout the world, bringing the ‘right’ wines to the ‘right’ importers.

After living in the old vine Garnacha country of the Gredos Mtns (just west of Madrid) for the past 5 years, Wendy has become involved in another exciting project, with the creation of a new DOP in the area, and the Asociacion de Vinos de Cebreros. We hope to have the new DOP Vinos de Cebreros gain official status some time in 2017!!
